Restaurants and bars in Marburg
And what do the locals eat and drink? The typical drink for Hessen is “Apfelwein” (cider) and it is even served in its own glass. You can drink it pure or mixed. “Sauergespritzt” is Apfelwein mixed with mineralwater. “Süßgespritzt” is a mix with lemonade.
Typical local food: “Grüne Soße”. This sauce is made with fresh herbs (Borage, chervil, cress, parsley, burnet, sorrel and chives) and usually served with boiled potatoes and eggs. Only the restaurants serving German food have it on the menu. The other local dish to try is the “Auflauf”, a stew usually covered with a layer of cheese that is slowly cooked in the oven. The auflauf can be found with almost any combination of ingredients and on almost every student menu in Marburg.
